Hey Reader, Today is Fat Tuesday, which means I'm enjoying all the paczki I can before Ash Wednesday tomorrow. But with the start of Lent, it's time - for me at least - to think about what I'll be eating on my no-meat Fridays. Whether you follow the traditions of Lent or just enjoy eating meat-free meals sometimes, these are some of my faves. It doesn't all have to be Fish Fry Friday either because that's just not my thing. Sometimes, simple is best, and Cacio e Pepe is one of my favorites. It takes just about 15 minutes to make, and most of that time is boiling the pasta itself, but the flavors are perfect and so comforting. If you want a little more protein in your pasta, my family adores this Tuna and Tomato Pasta that is so simple, my kids started making it themselves in their early teens. I made it once for a friend who is Italian, and even she raved about it, so put this on your menu. Orange Salmon is another really quick recipe you can make with ingredients you probably have at home, and it's perfect for the end of the week when you don't have much energy to prep dinner but want something you'll enjoy. On the other hand, if you want to make something super fun that would be a great date night or family activity, try making sushi at home. These Homemade Spicy Tuna Rolls use canned tuna, so you don't have to worry about raw fish. You can amp up or down the spicy kick, depending on your preference, which makes them even more family friendly. Whether you celebrate Fat Tuesday with Mardi Gras, paczki, pancakes for Shrove Tuesday, or Fasnacht, enjoy your week!
